Most beginner greenhouse guides are written for zones 6–7 growers. The minimum night-temperature advice assumes your greenhouse only has to handle a light frost. The snow-load guidance assumes you never get more than a couple of inches at a time. The heating math assumes you can get away with a small electric heater on a $30 thermostat. Minimum winter night temperatures, by crop

The number that decides which crops survive your winter isn't the outdoor temperature — it's the temperature your greenhouse actually holds overnight. Unheated polycarbonate greenhouses in zones 3–5 typically hold 5–8°F above the outdoor low, which means a -10°F night ends up at 0°F inside. That's well below the survival threshold for most crops. Here's what each crop tier needs to stay productive.

Cold-tolerant greens (lettuce, spinach, kale, mâche, claytonia). These handle brief drops to 22–28°F without damage. Some can survive short periods at 18–20°F under row cover inside the greenhouse. The trick is keeping daytime temperatures around 45–55°F so growth continues, then accepting that growth slows or pauses in deep cold. Without any heat at all, expect lettuce and spinach to produce slowly through December–February in zones 6–7, and to survive but not really grow in zones 3–5.

Cool-season root crops (radishes, carrots, beets, turnips, green onions). Hardy to about 15–25°F at the root zone. The tops die back but the roots are harvestable all winter if the soil itself doesn't freeze solid — a 6-inch soil column holds enough thermal mass to stay around 32–40°F even when air temperatures dive. Mulch heavily with straw (4–6 inches) for extra protection.

Brassicas (overwintering cabbage, broccoli, kohlrabi, Brussels sprouts). The most cold-hardy food crops. Established plants can take 10–15°F without protection. Young transplants need closer to 28–32°F. In zones 3–5, late-summer planting of brassicas works because they mature in fall and stand through winter — every mild day resumes growth.

Warm-season crops (tomatoes, peppers, cucumbers, basil, eggplant). Anything below 50°F stalls growth. Below 45°F and warm-season crops sulk for weeks. Below 35°F and they're typically killed. Practical rule of thumb: if your outdoor minimum temperature in the coldest month is colder than -10°F (typical for zones 3 and most of zone 4), an unheated greenhouse won't keep any food crop actively growing. Frame snow-load rating — what your greenhouse frame must survive

Snow-load is the single most common cause of cold-winter greenhouse collapse. A 6×8 ft greenhouse roof holds 8–12 inches of fresh snow before the load exceeds what many budget frames can handle. Wet, heavy snow collapses in a single storm. Ice is worse — a half-inch of ice on top of 6 inches of snow can double the load.

What's a realistic snow-load rating? For a residential backyard greenhouse in zones 3–5, look for a frame rated to at least 20 pounds per square foot (PSF). That covers most winters in zone 5 and the milder zone 4 areas. For zone 3 and high-snow zones (mountain West, upper New England, Great Lakes snow belts), push to 30 PSF or higher — the upgrade is the difference between a kit that handles a bad winter and one that pancakes in February.

Frame material matters more than shape in snow country. Heavy-gauge extruded aluminum frames (1.5mm+ wall thickness) hold up better than the thin-wall aluminum on budget kits. Galvanized steel frames are heavier to ship but beat aluminum on snow-load at the same weight class. PVC and polyethylene "hoop" frames are tempting because of price, but they don't carry published snow-load ratings and have collapsed in real winters — avoid them in zones 3–5 unless you accept the replacement risk.

Roof pitch and shape change how snow slides. Steep-pitched roofs shed snow naturally. A-frame and gothic-arch designs do better in heavy snow than flat or low-slope designs. Quonset (hoop) shapes are intermediate. If you're in zone 3–4 with 60+ inches of annual snowfall, prioritize A-frame over Quonset even if it costs more.

Active snow management still matters. Even a 30 PSF frame needs help in a true storm. Plan to brush snow off the roof after every 4–6 inches of accumulation. A long-handled snow brush from inside the door takes 5 minutes and prevents the load from getting close to the rated limit. Leave an inch or two of snow as insulation against the panels — scraping panels completely exposes them to radiative heat loss overnight.

Supplemental heating: what it actually costs per month

Heating is the line item that surprises cold-winter growers the most. A small 1500W electric heater looks cheap at the hardware store, but in a zone 3–5 winter it can run almost continuously through December–February. The math matters. Here are the realistic monthly costs by zone, for a typical 6×8 ft to 6×10 ft beginner greenhouse.

Zone 5 (cold-winter moderate — minimum -10 to -20°F). A 1500W electric heater on a thermostat, set to maintain 35–45°F overnight (cold-season crop range), runs roughly 8–12 hours per night in the coldest months. To hold 55–60°F for warm-season crops through the same period, double those numbers.

Zone 4 (cold — minimum -20 to -30°F). A 1500W heater runs closer to 14–18 hours per night in deep cold. The single heater starts to feel marginal — many growers add a second 1500W unit or upgrade to a 3000W propane heater as a primary, with electric as backup. Zone 3 (very cold — minimum -30 to -40°F). An electric heater alone is rarely enough. What to grow — and what to skip — by cold-winter zone

Not every zone 3–5 winter is the same. Zone 5 (minimum -10 to -20°F) and zone 3 (minimum -30 to -40°F) need different crops, different heater sizing, and different expectations. The list below is what actually grows in each band, based on what real cold-zone greenhouse growers report.

Zone 5 growers (minimum -10 to -20°F). The "easier" cold-winter zone. With a small 1500W electric heater on a thermostat, you can keep cold-tolerant greens and brassicas growing slowly through December–February. Lettuce, spinach, kale, mâche, claytonia, radishes, carrots, beets, and turnips all produce. Warm-season crops (tomatoes, peppers) need a higher setpoint and a longer heating commitment — most zone 5 growers treat them as a spring-through-fall crop only. Strawberries overwinter well; plant in fall for spring harvest.

Zone 4 growers (minimum -20 to -30°F). Heating costs go up sharply. Most zone 4 growers shift to growing only cold-tolerant crops through the coldest months (lettuce, spinach, kale, brassicas, mâche) under minimal heating. Tomatoes and peppers are a summer-only crop unless you're willing to spend $200+ per month on heat from December through February. Garlic planted in October and mulched heavily overwinters reliably. Consider a double-layer poly or twin-wall polycarbonate on the north wall for additional R-value.

Zone 3 growers (minimum -30 to -40°F or colder). The most demanding cold-winter zone. Active heating is mandatory for any food production. Most zone 3 growers plan for one main heated crop (typically salad greens, sold at winter farmers markets or used at home) plus a long list of "survival storage" crops — root vegetables, garlic, winter squash — that don't require heat. Microgreens are the easiest heated winter crop of all: 7–14 day cycle, minimal heat input, high value per square foot. Tomatoes and peppers are not realistic winter crops at this zone without a major heating commitment.

The first-year mistakes unique to cold-winter growers

Cold-winter growers make a different set of first-year mistakes than zone 6–7 growers. The crop list is shorter, the heating math is stricter, and a single decision (frame rating, heater size, setpoint) compounds across the whole season. Here are the five I'd tell my year-one self to avoid.

Buying a frame without a published snow-load rating. The single most expensive mistake. Many budget kits advertise "winter use" without a PSF rating. If the frame doesn't have a published rating of 20 PSF or higher (30 PSF in zone 3), assume it's not engineered for real snow. Buy from a manufacturer that prints the rating on the spec sheet.

Underestimating heating costs. Most zone 3–5 first-year growers underestimate heating by 2–3×. A small 1500W heater that "feels right" in October becomes a $250–$350 monthly bill in January. Before you buy, run the actual math: estimated runtime per night × heater wattage × electricity rate × 30 days. If the number scares you, scale down your heated crop list or scale up your insulation. Growing warm-season crops through the coldest months. Tomatoes, peppers, cucumbers, and basil all need 55–60°F minimum to stay productive. Skipping the thermostat. A heater without a thermostat runs full-power 24/7. The thermostat cycles the heater on and off to maintain the setpoint.
